Pre-cooling is the fist step in good temperature management of fruits and vegetables after harvest. The best way to curb spoilage is to quickly remove field heat and maintain the prescribed specific temperature of the product as soon as possible. Field heat is the heat a product holds from the sun and ambient temperature. This heat can be detrimental to the quality of fresh produce and needs to be removed from the product as soon as possible through a pre-cooling process.
