Full ripe Mission olives are handpicked and cured according to the benchmark Greek method to deliver flavourful natural black olives. The Manzanilla and Noccelara del Belice cultivars are picked when it has reached optimal size, but before it begins to turn colour. The olives are carefully sorted and fermented in the Spanish style.
